It surprised me at how well it cut the cheesecake slices - just like a traditional sharp knife but without damaging the non-stick surface.So now I use it whenever I need to cut anything in ANY of my non-stick pans, cookie sheets, whatever. This knife is amazingly great and quite useful. No worries with cutting anything in a non-stick pan since it won't cut into the non-stick surface.
